Biography

Dr. Kshitiz Kumar is currently working as an Assistant Professor in the Department of Food Processing and Technology at A D Patel Institute of Technology, CVM University, Anand, India. Dr. Kumar has received a first-class degree in B.Tech from Allahabad Agricultural Institute, Allahabad, in Food Technology (Process & Food Engineering). He obtained his M.Tech in Food Engineering & Technology from Sant Longowal Institute of Engineering and Technology, Punjab, India. Dr. Kumar completed his Ph.D. in food technology at Amity University in Uttar Pradesh. He has 12 years of experience teaching at the undergraduate and postgraduate level for various food engineering courses such as Food Engineering Operations, Thermal and Non-Thermal Processing of Food, Food Engineering Transport Phenomena, Food Storage Engineering, and Engineering Properties of Food and Applications.

He has published various research papers in peer-reviewed national and international journals. His research area includes food rheology, the application of ultrasound in food processing, starch modification, food packaging, and food extrusion. Dr. Kumar has edited two books, one on starch modification and the other on food packaging, published by an international publisher. Besides, he has published various book chapters on food processing and unit operations. Dr. Kumar has supervised ten M.Tech theses and worked as a guide for many undergraduate B.Tech students. He is on the editorial panel of the Journal of Food Processing, which was published by Wiley. He was awarded the ‘Best Researcher’ and ‘Best Research Paper Award’ by CVM University, Anand in 2024.
